This reminds me somehow of your "random post boot black screen" error.
Are you sure you do not have a temperature or ram problem?

hmm, definitely let us know if it continues cropping up, and if anyone else is seeing this, please chime in. If you can keep notes on what you're doing when it happens (e.g. if it happens when you activate/deactivate a module or open a particular program, etc) that will help. If it happens again, open a terminal and see if you can restart the panel; if that fails, try to kill it and start it again.

This could be a bug in a more recent version lxpanel, which would explain why you've not seen it in other distros. It could also be something related to aufs. Has it only happened to you in version 3.0rc1, or in 2.1 as well?
