Hello,
I am able to ssh into the server and everything works as expected. When I perform a VNC connection the mouse is interactive but the keyboard does not work. I am using version 2.1.1.

keyboard (and mouse) does not work because X11vnc is launched in viewonly mode (it's meant for monitoring purpose).
please unsquash 009-x11vnc-extension.xzm and remove '-viewonly' switch from /etc/rc.d/rc4.d/Sx11vnc script to have interactive session.
btw: in next kiosk release you will be able to do it directly from the wizard.
