I am trying to use the slideshow screensaver. Is there a way to get it to auto refresh or do I have to go around and restart every kiosk when I update the images in the zip?

Kiosk restart is required. You could schedule it to 4.00 AM every day:

Does anyone know of a way to run a screensaver on this that will update dynamically instead of forcing me to go around and reset every kiosk? I have various people updating the cctv data at random times during the day, I pull those images for the screensaver.

You would have to create a background process which checks md5sum of last downloaded archive -> waits 5 mins -> downloads the archive again -> if md5sum is different then replace slideshow images in /usr/share/screensaver folder.

You could also use Kiosk Server and sync images on all kiosks with a single button click:
