Hi,
I was wondering if there was a way to build Porteus from scratch ? Let's say if I want to build it for some other architectures other than x86-64 versions. Probably for ARM devices.
How can I start ? Are there any build scripts that I can follow along for this ?

These may be what you're looking for. http://brokenman.porteus.org/current/build-scripts/ They're not for Porteus 5.0 but they were used by the creator of Porteus.

For Porteus for ARM builds you can try this one (although a bit outdated): Porteus 3.2 for Raspberry Pi 2 and 3 (armhf)
To build from scratch the closest we have is PorteuX, which is very similar to Porteus in many ways and you have up-to-date scripts that can build the whole system from scratch: https://github.com/porteux/porteux
