How is the GUI desktop zoom from newer Porteus implemented?
It works by holding the Alt Key pressed and using the mouse wheel to either zoom in or zoom out.

Older Porteus OS did not have this ability, and it works with Nouveau driver as well as with the NVIDIA drivers.

I mostly use XFCE or Openbox, so I cannot say for other DEs, but with these two, the zoom works.

But how was it implemented?

i think you might be mistaken about openbox. but it's certainly part of xfce4:
menu>Settings>Settings Editor>xfwm4>zoom_desktop
or
~/.config/xfce4/xfconf/xfce-perchannel-xml/xfwm4.xml line 87: <property name="zoom_desktop" type="bool" value="true"/>
also, compositing has to be on for it to work..

that's a different "zoom" :D , in this case it's zoom as in like a camera lens, or to make everything larger..
