I want to start by giving praise to this OS. From my experience it 'just works'. The installation is very easy, the OS itself is very fast and snappy. Keep up the great work guys!
I need a list of tablets that is known to work with this OS. Preferably inexpensive tablets, 12+ inch screens as well if possible. Any help would be much appreciated!

Well, you could put the OS on a flash drive go to different stores and try to test it in their display machines. Do note, on UEFI machines it will require disabling the Secure Boot option.

These are known to work (confirmed by kiosk users):
Dell Venue Pro 10
Dell Latitude 5175
Lenovo Thinkpad 10
NuVision 10-inch TM101A550L
NuVision 8-inch (not sure about the model)
WinBook TW100
WinBook TW700
Many other tablets with Intel CPU (wifi/sound may require customized build with 3rd party drivers/firmware).
In general: you should query manufacturer about Linux (Ubuntu) compatibility before buying the hardware.

If you have a concern about a particular brand/model you could download the free kiosk ISO and test it.

Hey there and thank you for your response. I'm actually looking to purchase something, I don't have a tablet yet to actually test with. That's why I thought it'd be nice if there was an updated list available, but if not I understand.
