Hi all. I need a way for a customer to update network info without physically accessing client & risk changing anything else. Is it possible to do any of the following ?

Online txt file where only select lines are editable
Use web form to edit or compile a txt config file

If you have any other suggestions please share

Custom build with wifi wizard would solve the problem:
https://porteus-kiosk.org/builds.html

The wizard would popup during kiosk boot if internet access is not available. Last connected Access Point would be remembered across the kiosk reboots.
