Today /home/guest became empty again, but the situation is different, so I think this is relevant. I've stopped using copy2ram and moved all of my own files /home/guest to a separate partition. (The only non-hidden files are Desktop and a symlink to a folder on that other partition on the pendrive.)...

1) I consider /home/guest becoming empty while copying large files into it a serious bug, stopping that session (reboot). Something that is unintended and needs prevention in some way. Alright, understood.

I made a folder inside the partition, then as root 'chown guest:guest <foldername>', and made a symlink as guest with File Manager shift-control-drag into /home/guest.

Thanks guys for the input so far. I've learned from you that all of /home/guest is loaded into RAM when in copy2ram mode ( but not with the default boot, right? ). Hello, thanks for welcoming me :) Porteus is on ext4. (The data pendrive is FAT32.) My hunch points to copy2ram, so I'll not use it for a while and see if the disappearing of /home/guest/* happens again. I love Porteus and I want to trust it.
