Real kiosk mode for Kiosk?

I'm confused. Isn't the entire point of the Kiosk version for a Kiosk? I tried it out, booted up and the Chrome browser had the address bar, tabs, menu in the top right like usual. How do I hide that and put the browser in kiosk mode? Hence the entire point of it? I see no option for it during setup.
